Strawberry Banana Oatmeal Breakfast Casserole

Breakfast is my favourite meal of the day, my love for french toast, pancakes, waffles and oatmeal knows no bounds. During the week it is hard to find time to prepare the breakfast foods I love. This oatmeal casserole recipe is the perfect solution. I can prep and bake it on a weeknight, and then individually package it for easy to-go breakfasts.

Strawberry Banana Oatmeal Breakfast Casserole

Adapted from Baked Oatmeal Casserole from Urban Nester

Ingredients:

–          2 cups oats (I used quick oats)

–          1/4 cup brown sugar

–          1 tsp. baking powder

–          2 tsps. cinnamon

–          1 tsp. nutmeg

–          1/2 tsp. salt

–          ¾ cup chopped walnuts

–          1 tbsp. vanilla extract

–          1 cup sliced strawberries

–          1 ripe banana, sliced

–          2 cups milk

–          1 egg

–          2 tbsps. butter, melted (you can also use margarine)

–          2 tbsps. peanut butter, melted

Directions:

  1. Preheat oven to 375 degrees
  2. Spray a 9 x 13 inch casserole dish with cooking spray
  3. In a large bowl, mix together the oats, sugar, cinnamon, nutmeg, salt and walnut pieces
  4. Gently mix in half of the sliced strawberries
  5. Add the oat and berry mixture to the casserole dish, making sure it is evenly distributed
  6. Place the sliced strawberries and bananas on top of the mixture in the casserole dish
  7. In a small microwave safe bowl, melt the butter and the peanut butter in the microwave on medium
  8. In a separate bowl mix together the melted butter and peanut butter, the milk, egg  and vanilla extract
  9. Pour the liquid mixture evenly over the mix in the casserole dish, then gently shake to ensure the liquid is dispersed throughout the mixture.
  10. Bake for 40-45 minutes, or until the mixture is set and top is slightly browned.
